PSA: My uncle told me to always cut with the grain on a brisket and I finally tried it the other way

Honestly, my uncle Frank, who ran a shop in Omaha for thirty years, drilled it into my head to always slice brisket with the grain to keep it together. I did that for my first five years behind the block. Tbh, last month I was prepping a whole packer for a customer's party and decided to try slicing against the grain on the flat, just to see. Ngl, the difference was night and day. The slices were just as neat, but when you pulled a piece, it came apart so easily and was way more tender. I served it to the customer and they called me the next day saying it was the best brisket they'd ever had. I feel a bit silly for sticking to the old rule for so long without testing it myself. Has anyone else had a similar experience with a piece of advice that turned out to be backwards for them?

My whole plan for the Orion Nebula got wrecked by a streetlight

Last week I drove an hour out to this dark sky spot in the Arizona desert, set up my camera, and got everything focused. Right as I started a 3-minute exposure, a huge new streetlight on the nearby road flickered on. It washed out the whole shot, just a big orange blob. I packed up after two more tries because the light never went off. Has anyone else had a good spot ruined like that, and what did you do?

Update: Got stuck in a drift up near Eagle River last season, had to get pulled out by a guy on a Polaris. Changed how I pack my gear now.

An old timer told me to never trust a worn collet, even if it looks fine

Don't just blame the speeds or the tool.' I thought he was being overly cautious. About six months later, I was running a batch of 304 stainless parts and getting a terrible finish. I messed with the feed, the RPM, everything. Finally, I swapped out the collet for a new one, even though the old one looked clean. The chatter vanished completely. Ray just nodded from across the shop. Now I keep a log and replace them on a schedule. How do you guys track collet wear on your machines?

I was listening to a podcast about the Hubble Deep Field and it hit me how small we are

I was driving home last Tuesday and had this astronomy podcast on. The host was talking about the Hubble Deep Field image, you know, the one where they pointed the telescope at a tiny, dark patch of sky for days. He said that patch was like the size of a grain of sand held at arm's length. But in that 'empty' spot, they found thousands of galaxies, each with billions of stars. I had to pull over for a second. I think I'd seen the picture before, but hearing it described that way just made it real. All the stuff I worry about, my whole life, is happening on a speck of dust in one of those galaxies, in that tiny dark spot. It didn't make me feel sad, just really quiet. Has anyone else had a moment like that with a specific space photo?
