Having all those knives out in the block means they're ready for any task, even the rare ones. That bread knife is a lifesaver when you finally need it, and digging through a drawer for it is a pain. A full block also looks complete and professional on the counter, not like you're missing pieces. Sometimes having the right specialized tool, even if it's not daily, is worth the prime real estate.

You could just say you're trying to stick to a tight food budget so you can't spare extras anymore. In my experience, people often don't realize how often they ask until you point it out. A simple "sorry, I'm all out" works too if you don't want the money talk. Protecting your wallet is completely reasonable.
