DAE have to choose between a gas range and induction when remodeling their kitchen?

The efficiency numbers sound great on paper but they don't tell you how annoying it is when the power goes out and you can't cook anything at all. Gas ranges work with just a match and give you way more control over the flame for stuff like charring peppers or getting that smoky flavor that induction just can't do. Heating speed doesn't mean much if you miss having the flexibility and reliability of real fire in your kitchen.

That time a homeowner in Cincinnati asked me why I was using a 6-inch knife for the first coat

The 10 pound veggie test is exactly right man. It's not just about knives either. I notice this same pattern all over the place, like with tools or even kitchen gadgets. People will use the wrong size wrench on a bolt and end up stripping it, then blame the wrench. It's fine for one quick job but when you push it, the limits show up fast. A lot of folks just never hit that point where the wrong tool actually costs them time and energy. So they think it's all the same until they're stuck with a cramped hand and half a pile of onions left.

Overheard a phone call at my dentist's office that made me cancel my appointment

Derek's buddy kind of got off easy though @derek_brown28, a lot of dental offices flat out make you pay the full amount upfront and then you have to fight insurance yourself. If they only owed $450 after insurance paid their part, that actually sounds about right for the area of work involved. Maybe people just don't realize how much these simple procedures really cost before insurance kicks in.

The old tube layout charts vs. the new digital prints - a real difference I saw

Same thing happened to me on a chiller last month. Lost an entire afternoon.

Rant: Everyone says to always replace the whole dryer drum assembly, but after a job in St. Louis where I just swapped the worn rear bearing for $15, I saved the customer over $300.

Ovens are the same way with the igniter. Everyone wants to swap the whole gas valve assembly but 9 times out of 10 its just the $20 igniter that burned out. Such an easy fix that saves people hundreds.
