Choosing between a 2.5 pound and a 4 pound cross peen hammer for a big scroll job

I had a commission for a set of four large gate scrolls last month. I was stuck between using my trusty 2.5 pound cross peen or buying a heavier 4 pound one for the initial shaping. I went with the heavier hammer, thinking it would move the 1/2 inch stock faster. After about an hour, my elbow was killing me and my control was off. I switched back to the lighter hammer and the work was slower, but way more precise and less tiring. Has anyone else found a sweet spot for hammer weight on bigger decorative pieces?

I was visiting family and walked into a butcher shop that's been there since the 80s. The whole front case was just factory sealed packs, no whole cuts in sight. The guy behind the counter said they switched over about two years ago to cut down on labor. It made me think of my first job where we broke down two whole sides a day by hand. I miss seeing the skill on display and talking to customers about different cuts. Does anyone still run a case with fresh cuts in a bigger city anymore?

Why are my drywall cuts around outlets always so rough?

I keep messing up the cuts for electrical outlets, and it's driving me nuts. I use a drywall saw, but the edges end up looking like a toddler did it. Is there a secret to getting clean cuts every time? I've tried marking with a pencil, but my hand isn't steady enough. Any tools or methods you guys swear by?
