Shoutout to the baker at the Portland farmers market who showed me a different way to handle butter

Wait, you just grated frozen butter right into the flour? That's wild. I've been cubing cold butter and smashing it with my hands for years. The idea of using a cheese grater for pastry is blowing my mind a little. I always thought the big chunks were what made the flaky layers. I need to try this next time I make biscuits.

Warning: The 'low and slow' mantra is getting twisted

My buddy's turkey turned out dry as sawdust at 350, but his next one at 325 was perfect.

My cordless clipper battery gave out mid-fade yesterday

Going back to the stone age" is exactly how I felt. I swore by corded clippers for years, thinking battery tech wasn't reliable. A Wahl Magic Clip finally changed my mind on that. The thing just lasts.

Showerthought: I used to think job hopping every 2 years was the only way to get ahead

It's a gamble either way. The grass is always greener until you find out they were about to water your lawn. That old boss story is a gut punch for sure. Staying put lets people actually see what you can do over time. But you also hear about folks who get stuck and taken for granted. Seems like the real trick is knowing which place is actually worth sticking around for.

Had a whole lift of 5/8 board slip off the forks in a Cincinnati high rise last week

Ever check the strap's date code? Those things can get weak just sitting in the sun on a truck bed for a few years.
