Had a whole section of mud crack on me in a Denver basement last month

It was a cold snap job, and I think the mix was too thin for the temperature. I had to scrape it all off, let the board dry out for a full day, and start over with a slower-setting compound. Has anyone found a good cold-weather mix that holds up better?

Oof, that's a rough one. Actually, letting the board dry for a full day might not be enough in a cold, damp basement. You really need to check it with a moisture meter first. I've seen guys rush that step and the new mud just fails again. A slower setting compound is the right move, but the prep has to be spot on.

Yeah, the moisture meter is key. I had a patch in my own basement that felt dry to the touch but the meter was still reading high. Ended up running a dehumidifier right at the spot for two full days before it was ready. That slower mud gives you more working time, but it won't stick to a damp board no matter what.
