A farmer's market visit sparked a big fight over hidden additives in bread
I was buying fresh bread at the market last Saturday and got talking to the baker. He claimed most store bread has chemicals that are not listed on labels. We debated for an hour about if companies hide this info on purpose. I tried to find facts online but got mixed results. Has anyone else looked into this kind of food secrecy? I think it's worth talking about what we really eat. What do you all believe about hidden ingredients in everyday foods?

My buddy in Seattle got obsessed with this after a similar market chat. He spent months emailing companies and found most "hidden" stuff was just processing aids that legally don't need a label. The whole thing burned him out for very little actual payoff.

Calcium propionate is a common preservative in store-bought bread. I mean, it's FDA-approved and used to prevent spoilage. Idk, maybe it's just me, but the panic over hidden additives seems overblown when these things are regulated. Most companies follow labeling laws, so if something's not listed, it's probably in such tiny amounts it doesn't matter.

Seriously, cole_lee is spot on! I went down that same rabbit hole a while back after a chat with a vendor at our local market. I spent weeks reading every bread label at the grocery store, driving myself nuts. But you know what? I finally had to ask myself, is this worry actually helping my family or just making me anxious? The rules are there for a reason, and most of this stuff is just to keep food safe to eat.
