Warning: my new sous vide machine almost ruined a 72-hour short rib project
Last week in the prep kitchen, the water level dropped overnight and the circulator overheated. I caught it just in time by setting a second alarm on my phone for 3 AM to check the bath. Anyone else have a backup plan for long cooks?

Yeah exactly, like davis.linda said, the 3 AM alarm is the real issue. I mean, who even functions on that? It's not just the wake up, it's trying to fall back asleep after. You're just lying there staring at the ceiling for an hour.
