Smoked a brisket with pecan wood for the first time and I was totally wrong about it
I always thought pecan was too mild to make a difference but my neighbor in Kansas City convinced me to try it on a 15-pound packer. Has anyone else been surprised by a wood type they wrote off?

Wait, are you telling me that wood actually matters and I've been wasting money on fancy charcoal this whole time?

Started using hickory on ribs last summer and it was a night and day difference. Now I grab whatever wood matches the meat and just use basic briquettes for the heat.
