Got called out for my brisket bark at a cook-off in Austin

A judge told me my bark was 'too salty and crumbly, like burnt toast' after my first entry. I cut my salt rub by a third and started spritzing with apple juice every hour instead of just water. Has anyone else fixed a bark problem by changing their spritz?

Yeah, the bark learning curve is real. My first one looked like a meteorite sample. The apple juice trick definitely helps keep it from turning into a salty brick.

Remember my first attempt at a brisket? I completely misjudged the heat and the smoke. It came out looking like a lump of charcoal, totally black and hard as a rock. I had to throw the whole thing out, it was that bad. Took me three more tries before I got something even close to edible.
