Caught an old episode of 'BBQ Pitmasters' from 2010 on TV last night
They were using these big, heavy offset smokers that you had to babysit all night. It made me miss that kind of work, even though my pellet grill is way easier. Anyone still run one of those old school pits for their weekend cooks?

Man, that show takes me back. My neighbor still runs an ancient offset that looks like a rusty train car, and the smell from his yard on a Saturday morning is just different. There's something about that all night fire watching that you just can't get from a set-it-and-forget-it cook. Totally get missing the work even when you've got the easy button sitting right there.

Wait, your neighbor's offset still works? That thing looks like it should be in a scrap yard. I'm with @abbychen though, you can't beat that old iron taste.

Those all-night cooks on the old offset smokers are a real labor of love. I still fire up my old stick burner a few times a year just for that feeling. The pellet grill is for Tuesday, but that heavy iron is for Saturday.
