That $80 'artisan' bread flour was just regular flour in a fancy bag
I bought this expensive bread flour from a local mill's booth at the farmers market last Saturday for $80 for a 25 pound bag. It claimed to be special heritage grain and all that. Made two loaves and they turned out exactly like my usual $5 store brand flour. I emailed the mill asking for the protein percentage and they never replied. Anyone else get suckered by overpriced flour with no actual difference?

80 bucks for 25 pounds of flour? That's wild. I dropped $30 on a 5 pound bag of "heirloom" rye from some hipster mill in Portland once and same thing, my loaves came out just like the $3 rye from the grocery store. The marketing really gets you with those heritage stories. I'd be pissed about the email ghosting too, that's shady.

Your 5 lb bag was $30, so that's $6 a pound. His 25 lb bag at $80 works out to $3.20 a pound. Even at that price he's paying double what the grocery store charges for standard flour. Did you notice any difference in how your dough handled with that heirloom rye versus the cheap stuff? Like did it absorb water differently or need a longer proof time?
