My lemon meringue pie filling just refused to set last night
I followed my grandma's recipe exactly, even used a fresh lemon from my tree. The cornstarch slurry looked right, but after I poured it back into the pan to thicken, it stayed soupy for over 20 minutes. I ended up adding another tablespoon of cornstarch mixed with cold water, which finally did the trick after a lot of nervous stirring. Has anyone else had a cornstarch thickener just decide not to work?

Cornstarch can be weird if the heat's not high enough.

My grandma taught me to mix cornstarch with a little cold water first, @dakota_murphy90. If you add it straight to a hot but not boiling gravy, it makes those weird little clumps no one wants. Getting the slurry right is half the battle.
