Heard a baker at the market say they never check their oven temp with a separate thermometer

They said their oven's built-in display was 'close enough'. My last batch of sourdough in December was a total brick because my oven runs 25 degrees cold. I didn't know for months. How many of you actually verify your oven heat? What's your method?

My old oven was off by almost 40 degrees. I used to trust the dial until I ruined three loaves in a row. Now I keep a cheap oven thermometer in there all the time.

But what if the dial is right and the thermometer is wrong? I had a cheap one that would swing 20 degrees just from the oven door opening. Maybe those ruined loaves were from bad yeast or old flour, not the oven. Sometimes we blame the tool when it's our own rushing or a bad recipe.

My oven manual actually says the built-in thermostat can drift over time.
