inMy trip to Portugal made me rethink how we proof dough
Oh man, that rock hard stage is the worst. I almost gave up on sourdough completely after my first few bricks. The fridge trick finally worked for me when I stopped rushing it. Letting it go a full 24 hours cold made all the difference, the dough just has more time to get that good flavor without overdoing it. It's a patience game for sure.

inJust spent $150 on a used thermal camera for my phone and it found a hot spot in a fridge compressor in like two minutes
Guess it's cheaper than hiring a ghost hunter for those cold spots.

inMy first dig in Arizona was basically just me and a tiny trowel
Honestly, that hand drawn grid was probably teaching you more. All that tech setup feels like a way to avoid getting your hands dirty. I've seen people spend a whole day fighting software glitches and drone batteries just to map a single test unit. Sometimes the trowel and your own eyes are the best tools you've got. You can't feel a subtle change in soil texture through a tablet screen.

inSpent $300 on a graded comic and now I'm not sure it was smart
Honestly that plastic case feeling is so real. Bought a graded book once just for the number, felt like I owned a test score not a comic. Ended up selling it to buy a beat up reader copy for a fraction of the price. The whole grading thing can really suck the joy out of it for me.

inFixing a Game Boy caked in cookie dough brings back memories.
My brother's old GameCube still has a melted Skittle stuck under the Z button. It makes me wonder if we lost something when devices stopped letting us see the wear and tear. Do you think that feeling of saving a friend came from the work you put in, or just from knowing every part of its history?
