TIL that guy who told me to stop using 3 different knives for dinner prep was right all along
My buddy Hank, who worked at a kitchen supply store in Portland, kept telling me to just stick with one good chef's knife for everything except bread. I spent 5 years juggling a paring knife, a slicer, and a cleaver like a fool. Made dinner for my brother's family of 6 last week and used just my 8-inch Wusthof the whole time. Anyone else have that one kitchen tool advice they ignored forever?

Used to think anyone pushing a single chef's knife was just being cheap or pretentious. I had three different ones on my magnetic strip and felt like a pro switching between them. Then I watched a buddy prep a whole Thanksgiving meal with just one 8 inch Wusthof and it kind of blew my mind. Tried it myself a few weeks ago and honestly felt like an idiot for all the years I spent fumbling with different handles and balances. Now I only pull out a second knife for really tiny stuff like trimming green beans. Still hanging onto my old ones though, just in case I guess.
