Rant: watched our walk-in gasket go from fine to moldy in 3 weeks because nobody wipes it down
I pulled the door seal two Mondays ago at the bistro on 9th and there was black slime all along the bottom fold, which never happened when the old crew did a nightly bleach wipe. Anyone got a gasket routine that actually survives a busy line?
Been there. Ours went bad even faster than that, maybe 10 days, and the smell about knocked me over when I opened the door one morning. What worked for us was plain hot soapy water every night, then a dry towel stuffed in the fold so it doesn't sit wet. The bleach alone didn't cut it once the slime set in, you have to get the gunk out first. Pull the whole seal off once a month too, there's always junk hiding underneath that you never see.
