Pro tip: Ditching the fancy thermometers for an instant read changed my steaks
I used to swear by those probe thermometers you leave in the meat while it cooks. Thought I was being all precise and high tech. Then I watched a guy at a comp in Austin just poke his ribeye with a cheap instant read after searing. Tried it myself last Saturday on a 2 inch thick strip. Came out perfect medium rare every time, no overcooking from the probe hole or lag. Anyone else ditch the leave-in probes for something simpler?

...and honestly that's exactly what happened to my buddy Ryan. He was the guy with the fancy bluetooth probe setup, tracking temps from his phone while his steak rested. One cookout he forgot to even put the probe in, just guessed on the sear and checked with a $15 instant read. We were all waiting for him to be upset but nope, best steak he'd ever made. Now he says the probe just makes you second guess yourself the whole time. I'm not saying I'll never use one again but for a thick steak? Instant read is the way.
