Spent 4 hours trying to get my brisket bark to set right in high humidity
Turns out I needed to wrap it in butcher paper a full hour earlier than usual, so has anyone else had to adjust their wrap time for the weather?

Oh man, humidity is the worst for bark, isn't it? I had the exact same problem last summer and felt so lost. Morgan512 is totally onto something with the fan idea, moving that sticky air away makes a huge difference. I ended up doing both, wrapping way earlier and using a little fan, and it finally worked. It's crazy how much the weather can mess with your cook times.

Forget the wrap, try putting a small fan near your smoker to move air around the meat. That extra airflow can help a ton when it's muggy out.
