Hand-kneading vs. stand mixer for sourdough - I went old school
After 3 failed loaves with my KitchenAid tearing the gluten, I switched to hand-kneading for my starter. Took 15 minutes longer but the crumb came out perfect on the fourth try. Anyone else ditch their mixer for sticky dough?

idk I kinda disagree with you on this one. I've been using my KitchenAid for sourdough for like 2 years now and never had it tear the gluten, I think you might've been running it too fast or too long. You gotta keep it on low speed and stop as soon as it comes together, if you walk away for a minute it'll turn into a mess. Hand kneading is cool and all but 15 extra minutes of sticky dough sticking to my fingers is not my idea of fun.

Exactly this. I switched to using my mixer on the lowest setting and just watching it like a hawk, soon as it stops sticking to the sides I pull it out. Been getting way better results than when I tried to walk away and do dishes.
