Rant: I used baking soda in my chili for a year before someone told me it was ruining the flavor

I was trying to cut the acidity from too many canned tomatoes, and a buddy in Nashville finally said that stuff kills the whole taste. Anybody else accidentally wreck a recipe with some random hack that seemed smart at first?

Oh man, I once tried to make my pasta sauce "healthier" by swapping the olive oil for apple sauce. Tasted like a fruit punch nightmare over spaghetti. Took me three batches before I figured out why everyone was suddenly "not hungry" at dinner.

Hang on though - did you use unsweetened applesauce? Because the sweetened kind has a ton of extra sugar that'll totally mess with savory dishes. Not saying it would fix the whole fruit punch disaster, but it might explain why it was so extreme.
