Just realized my local pizza place cuts toppings to order

Overheard the owner talking to a new hire yesterday. Said they hand-slice pepperoni right before it goes on. Not from a bag. That explains why the edges curl up in that perfect way. Anyone else notice this makes a huge difference or am I overthinking it?

My buddy Dave had the exact same experience when he moved to a new city. He used to rave about this one place back home that sliced everything fresh, and then he ended up at a chain place that practically microwaves their toppings. He tried like three different pizza spots before he finally found one that did the hand-sliced pepperoni thing again. He literally texted me a photo of the pepperoni curling up and said "found my people.

Yeah, that hand-sliced stuff really does make a difference. I used to get pizza from a place that did the same thing, and the pepperoni always had that nice crispy edge to it. Once I moved and couldn't find anywhere that did it like that, I really missed it.
