Just realized my new 2-gallon crock from the hardware store doesn't seal well enough for long-term sauerkraut.

I packed it with 5 pounds of cabbage last month, and the kraut on top dried out and got moldy because too much air got in, so what's a good heavy-duty weight you all use for wide-mouth vessels?

My buddy had the same problem and ended up using a big, clean river rock wrapped in a bag.

That "wrapped in a bag" part is key. I mean, it's funny how often the best fix for a modern problem is just a simple, heavy object from outside. I've used a brick in a towel to hold a tarp down, stuff like that. It's like we overthink things when the answer is just a rock.
