I finally saw why people get fancy fermentation crocks

I went to a local farm stand last weekend and the guy had a big ceramic crock with an airlock setup. He let me smell his sauerkraut mid ferment and it was way less stinky than the jars I've been using. The weight system keeps everything submerged without me having to check it every day. Has anyone else switched from mason jars to a proper crock and noticed a big difference?

The real game changer for me was how much easier it is to clean the crock compared to scraping salt residue out of mason jar threads (that drove me crazy).

Three pounds into a batch and I'm already finding salt crystals in the weirdest spots on my counter. @harperschmidt, how often do you actually scrub the threads out versus just giving up and letting them crust over? I've been trying to keep mine surgical clean but the mason jar lids still trap grit no matter what I do.
