Update: I've been making my coffee wrong for months
I always just poured hot water straight from the kettle over my grounds in a French press. This morning, I watched my friend in Seattle let the water cool for a minute after boiling before pouring. I tried it, and my coffee tasted way less bitter. I guess boiling water right away was burning the grounds. What's your go-to method for a French press?

That trick is a total lifesaver, honestly. My cousin showed me the same thing with a pinch of salt in the grounds before brewing. Cuts the bitterness right out, even with cheaper coffee.
