PSA: My 'good' coffee was just bitter water for a decade

I was making a pot for my sister when she visited last fall, and she asked why my kettle was whistling. I had always boiled the water full blast. She said, 'You know that's way too hot for that light roast, right?' I'd been burning the beans for years without a clue. I got a simple thermometer and started brewing at 205 degrees, and the difference was crazy. Has anyone else had a basic thing they were messing up for ages?

Wait, isn't 205 still a bit hot for a light roast? I usually aim for like 195.

Yeah, I push it that high sometimes to get more out of those bright, acidic notes... feels like it opens up a bit more.
