Wasted $75 on a fancy mandoline that sat in the drawer for 6 months

I bought this high end mandoline from a kitchen supply store in Portland because I thought it would make prep faster. It just sat there because I was too nervous about cutting my fingertips off just like every other one I ever used. Finally sold it to a commis for $20 and went back to my old chef knife. Anyone else have a gadget that sounded great but just collected dust?

Exactly. Bought a nice one myself. Still scared of it. Knife works fine.

You're totally wrong about this one. A good mandoline is a game changer if you put in a tiny bit of practice. I've had mine for years and never cut myself once. Just get the hand guard and pay attention. The slices come out perfectly even every time which makes a huge difference for things like potatoes au gratin or pickling onions. You probably just needed to use it a few times to get comfortable. Knives are fine but they can't match the speed and consistency for big batches. Seems like you gave up too fast.
