The sous chef swore by keeping knives out of the drawer, now I get it

Marco at the bistro in Portland told me to stop putting my chef's knife in the sink even for a minute. I thought he was being anal, but after chipping the tip on a sheet pan last Tuesday, I finally listened. That one habit has cut my sharpening time by half and I've had zero edge breaks in 6 weeks. Anyone else have a rule they ignored for years until a dent or nick proved the old timer right?

Took me way too long to stop using my cast iron for tomato sauce, thought it was fine until the whole pan tasted like metal. Now I keep a separate enamel pot for anything acidic and it's been a game changer.
