Remember when a full knife roll was the only way to show you were serious?

Had a crazy busy Friday where my main prep knife broke right before service. My old sous would've freaked, but the new kid just pulled a single 8-inch chef's knife from his bag and worked through the whole night with it. Made me think about all the extra stuff we used to carry around. Anyone else feel like the gear focus has shifted a lot?

It's like we're all learning that having less stuff can mean doing better work.

Totally get what you mean about less stuff meaning better work. I cleared all the random apps off my phone and just use two now for notes. My to-do list is way shorter, but I actually finish things. It feels like my brain has more room to focus.
