Rant: spent $220 on a 'pro' knife sharpener that ruined my 8 inch chef knife
The thing pulled the edge off center because the guide slot was machined wrong, and I didn't notice until I was breaking down chickens at prep and the blade kept drifting left. A $15 whetstone from the restaurant supply on 9th does a better job, so save your money and learn to feel the angle on a stone. Anyone got a cheap truing stone they actually like?
