Pro tip: check your walk-in's door seal before a holiday weekend

Last Friday at the steakhouse in Tacoma, the prep guy said the cooler felt warm. I brushed it off. By Saturday night, we lost about $1200 worth of dry-aged ribeyes and duck confit. The rubber seal on the bottom hinge was split clean through, letting all the cold air out. Has anyone else had a seal fail that fast, or did I just get a bad batch?

That split seal failure is usually a slow leak, not a sudden one. A clean split like you describe often means the door was getting forced shut against something, maybe a rack or a pallet, for a while. The weak spot finally gave out under pressure.
