Can we talk about how my walk-in cooler died on a Friday night and I lost $600 in product?
Honestly, I'm still mad about this. Two Fridays back around 9pm my walk-in cooler just quit. Compressor made a weird click, then nothing. I had a full case of halibut I'd just picked up that morning from the supplier in Seattle, plus all my prep for Saturday brunch. Did the math and it was about $600 worth of food I had to toss. I stuck a thermometer in there and it was already at 58 degrees by the time I noticed. I called every repair guy in town and nobody would come out on a weekend without charging me double. So I moved what I could into the reach-ins and spent the night bagging ice. The worst part is my sous chef kept saying the cooler felt warm on Wednesday and I brushed it off. Now I'm getting quotes for a new unit and they range from 4 grand to 9 grand, which is insane. Anyone else been through this? Do you keep a backup plan for weekend equipment failures or just eat the loss?
