Appreciation post: The guy at the taco truck on 7th who talked me into trying the lengua

He said it was the tenderest meat he'd ever cooked and I was skeptical because tongue sounds gross, but after 11 years of eating cheap tacos I finally know what I've been missing.

My taco guy at La Mexicana #2 on 5th Street says the same thing. @sanchez.blake is right that the tortilla makes or breaks the whole thing. It's like how people obsess over the bun at a burger joint but ignore the bread at a sub shop - the foundation matters more than we want to admit. A cold flour tortilla just turns into a soggy mess by the third bite. My buddy always jokes that we're all just looking for that perfect vehicle to get the filling to our mouths without losing anything along the way. Corn tortillas have that slightly charred taste that holds up better too, especially when they're fresh off the griddle.
