Watched a young butcher grind 30 pounds of chuck yesterday and it hit me how much things have shifted

I'm old enough to remember when we did damn near everything by hand with a cleaver and saw. Three years ago at the shop on Elm Street, I still broke down a side of beef with just a handsaw and a boning knife. Last month a kid came in with a band saw and a electric grinder and he was done in 45 minutes what took me 2 hours. Yesterday he showed me his phone app that tracks yield percentages per animal part. I ain't knocking progress, but I do miss the feel of a good sharp blade going through bone. Anyone else feel like the trade is losing some of the old soul?

Nah, less mess and my back doesn't ache for two days after.

Used to be all about the old ways myself... but then my hands started giving out after a long day. Watched a buddy with one of those new grinders and yeah, my back thanked me later.
