Frozen veggie bags vs fresh, I roasted $11 worth on a Tuesday and felt ripped off
I grabbed a big bag of frozen mixed veggies because they were 2 bucks cheaper than fresh, but after roasting them on a sheet pan they came out soggy and watery. Now I'm stuck eating mush for lunches all week, and honestly the 15 minutes of chopping fresh broccoli and carrots is worth not wasting my money. Has anyone found a frozen brand that actually roasts halfway decent, or should I just always bite the bullet on fresh?

Man, that soggy veggie situation sounds painfully familiar. My last attempt at roasting frozen Brussels sprouts turned into a sad, steamy pile that even my dog refused to sniff. Turns out the freezer adds a ton of extra water that just steams everything before it gets any color. I've tried a few brands and they all do the same trick unless I crank the oven to like 450 and spread them out way apart, then they get kinda crispy on the edges but still mushy inside. Honestly, the only frozen thing that roasts decent for me is corn, which feels like cheating. So yeah, I'm with you on paying the fresh tax, even if my chopping skills look like a toddler did it with a butter knife.
