She swore by mincing garlic with a knife, said the press makes it bitter. I followed her way for 8 years at my place in Spokane. Then I tried a cheap press at my sister's house and the flavor was actually better, plus it took me 20 seconds instead of 4 minutes. Her theory never held up with any recipe I tested side by side.
