The guy who said my brisket needed ketchup still haunts me 2 years later
At a backyard cookoff in Tulsa back in 2022, this older fella walks up to my station after tasting my 14 hour brisket. He looks me dead in the eye and says "needs a little Heinz, son." I just stood there. My rub had a 2 percent brown sugar ratio, I trimmed the deckle myself, I wrapped in butcher paper at 165. But he wanted ketchup. I asked him what part of it tasted off and he said "the meat part." I still think about that. Is there any way to win over someone who thinks ketchup belongs on brisket, or do you just nod and let it go?

That "the meat part" line would've sent me to a therapist, not gonna lie. You put 14 hours into something and the critique is basically "it tastes like beef." Two years later and I'm guessing you still hear it every time you unwrap butcher paper. Honestly, you could've handed that guy a prime A5 wagyu and he'd have asked for a squeeze bottle. Some folks just don't get it, and the only winning move is to nod, hand them the Heinz, and quietly judge them for eternity.
