Showerthought: my cousin ran his offset with the firebox door cracked all afternoon and it cooked better than my sealed setup
We were out at his place near Waco two weekends back and his brisket came off with a cleaner smoke ring than anything I have pulled. Now I am second guessing if I have been choking my fire this entire time, so what temp are you all running your splits at?
