Bitterness in my smoked chicken vanished after ditching soaked wood chips
My smoked chicken always had a harsh taste. A pitmaster's tip about using dry wood chips fixed it for me. What tricks do you use for smooth smoke?

Soak your chips! I get a cleaner smoke flavor that never turns harsh on my chicken.

That "cleaner smoke" from soaked chips never happens for me. Dry chips burn slower and I get way less of that bitter taste.
