Almost threw out my dad's old offset because of one bad brisket and I'm glad I didn't
Three weeks ago I cooked a brisket on my dad's 1998 Oklahoma Joe offset and it came out dry as a shoe, so I listed it on Facebook Marketplace for $150. An old pitmaster named Ray from Waco talked me out of it at the last second and told me to check the firebox door gap with a dollar bill. Sure enough the door was warped and leaking heat, so I bent it back with a crescent wrench and my next cook hit 203 internal in 11 hours flat. Has anyone else almost dumped a smoker over one bad cook before you figured out the real problem?
Went through the same thing with a used WSM I got off craigslist. First two cooks were garbage and I had it boxed up ready to flip. Turned out the bottom vents were so gunked up they barely moved and the thing was choking itself out half the cook. Cleaned them out with a wire brush and it ran steady for 14 hours on one load of charcoal. Still mad I wasted a pork butt blaming the smoker instead of looking at it closer. Good on Ray for catching that door gap before you let it go.
