Unpopular opinion: Slow-rise bread isn't worth the hassle.

The extra taste doesn't make up for all the waiting.

Totally disagree, but maybe it's just me. That waiting time is the whole point, it's not just about taste. The process forces you to slow down, which is kinda nice in a world where everything is fast. You end up with something you actually put care into, not just another thing to consume. Honestly the hassle is what makes it good.

Yeah, isn't that the whole magic of it? Doesn't the whole thing just make you feel a little more calm in a non-stop world?

Consider how it changes your relationship with the thing you're making. You start noticing details you'd normally skip over, like the way the color changes or the texture gets just right. That focus pulls you out of your own head for a bit, which is its own kind of quiet. It's not just about being calm, it's about seeing something common in a totally new way.
