Honestly, after borrowing my friend's $400 KitchenAid with all the attachments for a month, my $80 Hamilton Beach from 2015 still gives me better, more consistent cookie dough texture every single time.

Ever wonder if the simpler motor in the cheaper mixer is actually better for basic tasks? Less power might mean it doesn't overwork the dough as fast.

Disagree completely on the motor thing. A more powerful motor in a KitchenAid gives you way more control, especially when you're mixing something thick like bread dough. The cheap mixer might struggle and burn out on a stiff dough, but the heavy duty one just powers through. That control is what gets you a better texture, not less power.
