My sourdough starter from 2020 finally gave up on me last Tuesday

Kept that thing alive through the whole pandemic. Fed it every single day. Even took it with me when I moved from Austin to Dallas. Last week, I went to bake my usual weekend loaf. The starter just sat there. Flat. No bubbles. Smelled weird, like old apples. Tried a few feeds to wake it up. Nothing. Felt like I lost a pet. Three years of daily care, gone in a day. Starting over feels wrong. Anyone else have a starter just quit after that long?

That Dallas water is different from Austin's. Might have thrown off the pH after the move.

My sourdough starter from Phoenix died a month after I moved to Seattle. The water change can really wreck them fast. You're not the first person I've seen that happen to.

That's a real gut punch. My old one from a bakery job did the same after about four years, just went totally flat and smelled like nail polish remover. Sometimes they just get tired, for lack of a better word. The new one you make will be different, but it won't be worse.
