My cake layers used to dome until I tried this oven trick

In my experience, cakes often rise too much in the middle if the oven is too hot. I started placing a pan of water on the lower rack while baking. For my last vanilla cake, this kept the heat steady and the top flat. Now I can stack layers without needing to trim them down. Your mileage may vary, but it saved me a lot of hassle. I learned this after a few lopsided bakes. Maybe it will help you too.

My old chocolate cake recipe was a total dome factory until I lowered my oven temp by 25 degrees. It's wild how much the heat alone can mess with the rise.
