The cake order that made me double check every recipe now

A bride in Portland called me last spring for a gluten free tier, and she specifically asked if my flour blend had xanthan gum in it. I said yes without looking at the bag, and it turned out the brand I grabbed that day used guar gum instead. Her reaction when she cut into the cake was pure panic, that crumb just fell apart on the plate. She told me, 'I trusted you because you said you knew what you were doing.' I refunded her $120 and spent the next week testing every single blend I stock. Has anyone else had a specialty diet request go sideways because you assumed one ingredient was the same? I now keep a binder of what is in every flour I carry.

Wait, isn't it on the customer to ask what kind of gum is in the blend if they're that specific about gluten free stuff? You told her it had gum in it and she assumed that meant xanthan, sounds like she just learned a lesson same as you did.
