A comment on my frozen fries video made me rethink everything

I posted a video of my air fryer fries, and someone said, 'You're just reheating frozen food, not cooking.' It stung, but they had a point. I started using fresh russet potatoes, soaking them for an hour, and drying them completely before adding a tiny bit of oil. The texture is completely different, way crispier. Anyone have a good spice blend for fresh fries that doesn't just burn?

Oh man, that commenter sounds like the kind of person who corrects your grammar online. Good on you for actually trying the fresh potato method though, it's a total game changer. For spices, I skip blends and just toss mine in garlic powder and smoked paprika right after they come out, never before. Anything with sugar or fine herbs just turns to bitter dust in the fryer.

Garlic powder and smoked paprika is the perfect combo. I learned the hard way about sugar burning, ruined a whole batch with a brown sugar rub once. Letting the fries cool for just a minute before tossing helps the spices stick without clumping.
