DAE think vegan brownie recipes always turn out dry?

My brownies came out crumbly every time I baked them. I saw that many recipes skip key wet ingredients. Adding mashed sweet potato instead of extra oil fixed everything. Now my brownies are moist and hold together well. Don't waste your time on those dry recipes anymore.

Sweet potato in brownies? That's wild!

Tried it with a cup of mashed sweet potato last fall. It makes them super fudgy and you don't really taste the veggie.

Honestly, I was right there with @mary965 thinking sweet potato in brownies sounded crazy. But my sister made a batch last year, and I couldn't even tell the veggie was in there. They were so moist and fudgy, just like you said. Now I get why people do it, it's a sneaky way to add something healthy. Might have to try it myself this fall.
