The cult of wild fermentation is overlooking basic hygiene risks.

Advocates for spontaneous fermentation often dismiss sanitation, but I've lost gallons of cider to mold contamination. A simple scrub with hot water would have saved it, but dogma prevailed.

Believe that skipping a simple scrub is worth losing gallons of cider? Mold doesn't care about your fermentation philosophy, it just needs a dirty surface to grow. When did basic cleanliness become optional in the pursuit of authentic taste?

Losing gallons to mold is unfortunate, but I've found that wild fermentation isn't about neglecting hygiene. It's more about understanding the native microbiota and controlling conditions, not just scrubbing with hot water. With careful practice, the risks can be managed without abandoning spontaneous methods.

Isn't microbial management more nuanced than just sanitation?
