He watched me struggle with a 12-foot corner bead on a Tuesday morning, then told me to cut them to size on the ground first, and I save about 20 minutes per room now, has anyone else found a time-saver like that?

Oh nah, corner beads aren't really meant to be precut like that. You're gonna end up with gaps at the joints where they don't line up perfect, and that's just more mud work later. Better to cut them as you go so you can match the exact height of each wall.

Call me crazy @haydenj90 but a tiny gap at the joint sounds like a quick dab of mud, not a full-on drywall crisis. I'll take 20 extra minutes of my life back over sweating a 1/16th gap any day.
