DAE have to choose between a gas range and induction when remodeling their kitchen?
I finally saved up enough to redo my kitchen after 8 years of dealing with a busted electric coil stove. I had to pick between a gas range and induction, and I went with induction after reading about the air quality stuff with gas. It's been about 3 months now and I'm honestly surprised how fast it boils water... like under 2 minutes for a small pot. But I keep accidentally trying to set pans down on the wrong burner spots. Has anyone else made this switch and regretted it or loved it?

My sister in law made the same switch last year and she told me something interesting she heard on a podcast. Apparently induction is like 90% efficient at transferring heat versus gas which is only around 40% or so. That stuck with me because I always thought gas was the gold standard but the numbers say otherwise. The learning curve with the burner placement is real though, I visited her house and kept reaching for the wrong spots too. She says after about two months it becomes muscle memory so you're probably almost there.

The efficiency numbers sound great on paper but they don't tell you how annoying it is when the power goes out and you can't cook anything at all. Gas ranges work with just a match and give you way more control over the flame for stuff like charring peppers or getting that smoky flavor that induction just can't do. Heating speed doesn't mean much if you miss having the flexibility and reliability of real fire in your kitchen.
